When Bread Isn't Bread
A customer recently sent me two Rustlers hotdogs. Nothing unusual about that, you might think, until I tell you they were dated over five years old. And here's the truly disturbing part: you can still squeeze the bread and it's spongy.
Let that sink in for a moment. Five years old. Still spongy. How is that even possible?
Real bread goes stale in days, mouldy within a week. Real bread is perishable because it's made from actual food.
But what you're holding when you squeeze that five year old bun isn't bread. It's a chemistry experiment masquerading as food, a shelf-stable product engineered to outlast your memory of buying it.
The Chorleywood Bread Process revolutionised bread production in the 1960s, cutting fermentation times and using mechanical mixers to infuse dough with water and air at lightning speed. This meant doubling the yeast, throwing in oxidants for gas, and a dollop of fat to give the loaf its lift.
Enzymes, those biological catalysts working silently away, don't even need listing on ingredients because technically they're not there by the time the bread hits shelves. And fibre?
Systematically removed. Not by accident, but by design. Why remove the fibre? Three reasons, all about profit: its removal confuses your satiety hormones making you eat more, it increases the speed at which you can eat food driving craving and addiction, and it artificially increases shelf life.
That hotdog bun isn't food, it's an industrial formulation designed to dissolve in your mouth faster than a politician's campaign promises, requiring no chewing, no digestion, just pure refined carbohydrate racing to your bloodstream.
When bread melts in your mouth, when it survives five years without moulding, when it stays spongy long past its sell-by date, that's not a miracle of modern food science. That's a red flag the size of a bakery.
Real bread is perishable. Real bread goes off. If your bread doesn't, you're not eating bread.
