Here's something that'll change how you look at every meal. When my friend Dr Robert Lustig re-engineered 180 products for a Middle Eastern food company facing a metabolic health crisis, he used just three principles to transform ultra processed foods into genuinely healthy options.

Any food you eat must do three things:

protect the liver

nourish the gut

energise the brain

Do all three? It's genuinely healthy food. Do none? It's not food at all; it's consumable poison. Do one or two? You're somewhere in between.

Protect the liver means eliminating added sugars. Your liver converts fructose directly into fat through de novo lipogenesis. Every gram of added sugar works against your liver's ability to function. This isn't about moderation; it's about being ruthless with sugar elimination.

Nourish the gut means prioritising fibre. The barrier separating your intestinal contents from your bloodstream is just one cell thick, protected by a mucin coating.
Your bacteria can eat this mucin layer, and here's the critical point: if you don't feed your bacteria with fibre, they will feed on you, consuming your own protective barriers.

Without adequate fibre, beneficial bacteria starve, harmful species take over and you develop leaky gut and systemic inflammation.

Energise the brain means adding omega-3s whilst removing sugar that hijacks your reward pathways. Your brain is 60% fat and requires specific nutrients like omega-3s and B vitamins.

Minimise fructose as it activates your reward centre exactly like cocaine, creating addiction through dopamine manipulation.
