How Yogurt is Made: The Transformation of Milk
Yogurt may seem like magic in a cup, but it’s really just a beautiful fermentation process at work. The milk is first heated, cooled, and then mixed with live bacterial cultures, typically Lactobacillus bulgaricus and Streptococcus thermophilus. These friendly bacteria eat the natural sugars in milk (lactose) and turn it into lactic acid, which gives yogurt that tangy flavour we all love.
