You might think artificial sweeteners are a sweet escape from spiking your glucose levels, but they also have quirks. Firstly, their sheer sweetness informs the body that sugar is about to come; they prime the pump. There's even a biological name for it: Cephalic Phase Insulin Response (CPIR).
